A RESTAURANT on the Herefordshire border is speechless after being told it was the only firm in Wales to earn a coveted green Michelin star.
Chapters, in Hay-on-Wye's Lion Street, was one of nine restaurants across the UK to earn the star for its efforts in being sustainable.
Only restaurants that combine culinary excellence with "outstanding eco-friendly commitments" are awarded Michelin Green Stars, with Pensons on the Herefordshire-Worcestershire border near Tenbury Wells among the nine.
The Hay-on-Wye restaurant said it was "beyond proud".
"To be honest we are struggling with the words to explain what this means to us but thank you Michelin and to our staff, guests, family, friends and suppliers for all of your support," the restaurant said.
Michelin stars are awarded for "outstanding cooking, including flavour, technique, expression, and consistency both over time and across the entire menu".
